each shore veg he's* {a mad gab}


Despite popular Pinterest techniques, my lunches don't fit in perfectly portioned boxes magically and meticulously packed once a week in an hour-long crazy kitchen flash.

Healthy eating is definitely not magical for me. It takes planning, smart shopping, energy, and will power (if I didn't know that vegetables were healthy and provide necessary nutrients to my body, I would probably eat very few of them!). My lunches, while usually well-selected, and often fairly healthy, are typically served in Rubbermaid and Pyrex containers, and are chosen more for their content than their eye-appeal. It's not that I dislike a beautiful lunch-- oh no, I love me a fresh, appetizing, healthy spread... but for now, the extra touch of special arrangements is simply an added bonus that sometimes happens and sometimes doesn't.

When I opened this recent lunch box at work and grabbed a few veggies before running off to a noon meeting, I found it impressively picture-worthy.

One of the many things I love about summer is the abundance of FRESH yumminess.

Blueberry Coconut Muffins


I used the last of my fresh blueberries from Michigan to make these muffins last week. Thanks to Susanna's recent move to Morocco, we had her leftover coconut in the pantry to use :). I don't think I've ever made blueberry coconut muffins, but they are yummy!

Since you probably want some too, here's the recipe:

2 c flour
1 T baking powder
1/4 c sugar (this is the amount of sugar I used, which is decreased from the original recipe, but which was a perfect amount to me)
3/4 t salt 

1 egg
1 c milk
1/4 c coconut oil (melted) --I'm sure butter or oil would work too 

Fold in:
1 1/2 c blueberries
1/2 c coconut (I used unsweetened flakes) 

Combine using standard muffin method (wet, dry, together). 
I sprinkled some coconut on top which looked pretty.  

Bake 15-20 minutes at 400F 

Makes 12
(Be sure to spray the pan or liners)

moving day (a how-to picture story)


First... you gather and package all of your "stuff."
It will probably take a lot of boxes.


As you pack boxes, you should also sort out things you no longer want/need.



Try to gather all of the items to be moved into one or two central places.


Then, celebrate the completion of packing(!) and take a moment to recognize the end of an era (i.e. you must say good-byes to this place where you have spent all sorts of life moments. It's okay to be a little sappy).

{In this instance, we walked to Sheetz after dark and "spent" a coupon to acquire a free cup of chocolate ice cream to share.}


After the ice cream, you sleep.

...

The next day, you rent a truck.


As part of your good-byes, you may choose to have one final breakfast together on the patio.
{We did.}


If you choose to do the breakfast, be sure not to pack the toaster too early!
Of course, tea is a necessity as well.



Soon, all of the strong and diligent friends you invited to assist will arrive.

It's optional whether or not you want to invite a foreman.
{We had an adorable three-year-old foreman giving cautionary orders that her daddy "be careful," and offering to help carry small items to be packed.}


The packing may only take less than an hour.

(Make sure the plants and chocolates have a safe place to travel.)


Once you arrive at your new residence, unload items and pile them in their final destination rooms.

Return truck to rental location (don't forget to top off the fuel on the way).

If you're like us, it is early in the day (moving only took 2 hours), so you have plenty of time to clean, organize, and begin unpacking.



After taking inventory of the haves and have-nots at your new place... you may need to make a trip to Target to purchase the necessary have-nots.

{One may have guessed we had never lived on our own previously judging from our cart full of necessary items. However, marrying off a roomie, and having spent a year in a fully furnished house accounts for a lack of certain must-have household items...}


Once necessary supplies are purchased (and you have eaten at a restaurant, because your kitchen is still not set up), go home (to your new home, that is) and clean.clean.clean (the toilet, the tub, the kitchen sink, the counters, all light switches, etc.) before unpacking your "stuff."

That's pretty much it.

Very simple, actually.



And if you're like me, you can get up the next morning and make the ten hour drive home.
{I probably wouldn't recommend you plan to do that part of the story, even if your move is simple!}

One of my favorite parts about June is FRESH STRAWBERRIES!
I only picked twice, but we managed to have a fairly steady supply of fresh berries in the house for at least a couple weeks of the month, and I even made one tiny batch of jam.

Market


As you well know, I love farmers' markets.
I'm sure it's not the full reason for my market love, but a contributing factor would include childhood memories of eating Amish cinnamon rolls (purchased at the market) at Grandpa and Grandma's house.

A kitchen can become "my" kitchen after the first batch of muffins has been baked.

That happened at our new apartment this week when I baked Michigan blueberry muffins to share at the office.

[I used this recipe (with decreased sugar), and highly recommend it.]
