Pickles


Coworker Mitch's five cucumber plants have produced prolifically this summer. I benefited from his garden abundance and managed to make some refrigerator dill pickles. 

Our apartment kitchen is not outfitted for significant food preservation: I had to search the grocery store for pickling spice, specially purchase kosher salt, and borrow a large jar from neighbor Pam in preparation for the simple pickling event!
The end product, though, is definitely worth the effort I invested in collecting and preparing the ingredients.

At Naomi's recommendation, I used this super easy recipe (with the addition of some pickling spice).

I was overly proud of the beauty of the quiche I baked this week.

I love, love, love fresh produce of summer, and managed to incorporate spinach, zucchini, and assorted sweet tomatoes in this simple yet elegant dish.

It was a wild Friday night for these two lame accountants...
and we laughed SO.MUCH.

Vacay Lake Day


Last month when I was home, we had a wonderful visit with friends on their private lake in Gladwin. The nieces were especially exited for the opportunity to go fishing from the pontoon boat, and several of us explored the lake via kayaks.
